I saw somebody put every single card in two sleeves. Do I need to do that now too?

I'd match the protection to how the card is used and make sure the sleeves fit together properly. More layers aren't automatically helpful if they make a pocket too tight. Start with good basic protection and a safe storage environment. Your collection doesn't need someone else's entire accessory routine.
