I used to like cards and now I mostly stare at the numbers on the slabs. Is that just what happens as you get more serious?

It can happen, but seriousness doesn't require it. Grades can help you describe and compare cards; they don't have to choose what you enjoy. I'd spend a little time looking at cards without checking their labels first and notice what still catches your eye. You can appreciate a high grade and also own something imperfect because you love it.
